Bissap is a West African drink that infuses water with the red flower petals of the hibiscus plant. Known by different names throughout Africa, sobolo, in Ghana , zobo in Nigeria, wonjo in Gambia ,karkade in Egypt and bissap in Senegal, Mali and Cote D'Ivoire. The deep red drink is often offered to guest as a show of hospitality. Some brew their hibiscus drink with aromatics and spices such as cloves, cinnamon, dried chilli and ginger while others use citrus, pineapple vanilla or mint. Regardless of the recipe the dried rosella flower is the star of the show. Add this refreshing drink to your next gathering and enjoy the added benefits of antioxidants, vitamins and reduced bloating.

Ingredients

5 litres of water
-
2 cups of dried Hibiscus flowers (roselle)
-
300g of Fresh strawberries
-
30g vanilla sugar (1/4 tsp vanilla essence)

Bunch of fresh mint leaves

½ cup of caster sugar
Garnish
-
3 tbs sugar
-
2tbs dried hibiscus flowers

Mint leaves
-
Fresh lemon
Directions
Bring 5 litres of water to a rolling boil
Wash hibiscus flowers with cold water and strain
Blend washed strawberries into a smooth puree and pour the puree into the pot. Boil for 3 minutes and switch off the heat.
Add washed hibiscus leaves and washed mint leaves into the boil and allow to steep .
Add vanilla sugar or vanilla essence. Followed by sugar.
Allow the bissap to cool down completely before straining.
Refrigerate and serve cold
To serve
Grind hibiscus flowers into a corse powder and mix with sugar.
Rub a lemon wedge around the rim of a glass and dip the rim into the hibiscus sugar.
Add ice and pour in hibiscus juice, finish with fresh mint leaves and a strawberry skewer.

Recipe Note
- Vanilla sugar can be substituted with vanilla essence.
- Save some fresh strawberries and mint for garnish.
- Boil strawberries to extend shelf.
- Substitute sugar with honey or agave nectar.
